The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions far back into the distant past, in fact as far back as pharonic Egypt, and possibly even further than that. However, generally, these ancient cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Progressing into The time of the romans around 25BC a roman called Apicius created a few scripts showing how to cook the recipes cooked by the Romans. In his publication, he recounts how the meals were divided into starters, entrees and desserts, something we still use today. Additionally, he describes how the early Romans were skilled in the use of many different aromatic flavours, including some familiar names like basil, fennel and parsley. During the next few hundred years, the families of Europe strove to offer the most extravagent banquests, and because of this cooks and their recipe collections were highly sought after. Nevertheless, it was during the 1800s that fine cooking and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to assembling, trying out, and writing down recipes that were common in the better off homes of the day. Like it or not, the introduction of TV gave us TV chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting everybody to access massive numbers of recipes like those on sites such as the one you are reading now. |
