The History of Recipes
Written cooking instructions as an idea can be observed way back into ancient history, in truth as far as ancient Egypt, and possibly even further than that. In practice though, these, early records were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the most ancient recipe found, according to academics is a series of stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. Continuing our culinary historical journey, we have two interesting cookery books which date from the 14th Century : a cookery book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these two books are unconnected to the curry that is popular today, but rather descriptions of the types of food cooked for the nobility of the time. Later on, in the 15th century, knights returning from the crusades brought us many new spices and herbs from the East, such as coriander, parsley, basil and rosemary. The introduction of these new tastes led to an eruption in manuscripts on food, many of which are now in academic collections. Over the succeeding few hundred years, the rich families of Europe tried to lay on the most exotic meals, and as a result cooks and their collection of recipes were much in demand. However, it was during the 19th century that formal cookery and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collecting, trying out, and publishing recipes for their fellow cooks to enjoy. The TV revolution brought us celebrity chefs and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes such as those found on sites such as this. |
