The History of Recipes
It is quite feasible to prove the history of recipes back into antiquity, in truth as far back into history as the Egyptians, and quite possibly further than that. Interesting though that maybe, generally, these old cook books were just basic pictorial recipes for meal preparation.
Interestingly, the most ancient recipe in existence, according to food historians are some stone tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. During Roman times 25BC a man called Apicius compiled a collection of scripts which described recipes enjoyed by the Romans. In his scrolls, he describes how the roman meals were split into hors d`oeuvres, main course and dessert, a very modern way of dining. This early Roman chef tells us how the Roman cooks were skilled in the use of a wide range of herbs and spices, including a few you will know such as bay, fennel and asafoetida. Later, in the 15th century, the Crusaders brought back many new foods, spices and herbs from Arab cooking, including spices like basil and coriander. These new spices and herbs created an increase in recipe publications, the majority of which still exist in academic collections. By the time we get to the twentieth century, cooking books were increasing in popularity due to more people being able to read, people having increased free time and having more money to spend. Like it or not, the introduction of TV brought us celebrity chefs and the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to access thousands of recipes just like those on our site. |
