The History of Recipes
Academics have proved the existance of recipes back into ancient history, at least as far back as early Egypt, and possibly even further than that. However, sadly, these early recipes were just primitive pictorial recipes for preparing food.
In an interesting twist, the oldest recipe discovered, according to experts are a few clay tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. During the time of the Romans a man called Apicius created some scripts detailing recipes prepared by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvres, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also recounts how the ancient chefs used a wide range of herbs and spices, including some familiar names such as basil, mint and asafoetida. Moving our culinary historical trip onwards, we have a couple of cookery books published in the fourteenth century ; a recipe book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. The titles are somewhat misleading tho`, these books are not about the spicy food that is served today, but instead descriptions of the types of food on the tables of the rich and powerful of the time. Later on, in the 15th century, knights returning from the crusades brought back a variety of foods and spices from the holy land, including spices like parsley and basil. The introduction of these new culinary ideas caused an increase in manuscripts on cookery, the majority of which are kept safe in academic collections. Over the next few hundred years, the upper-class families of Europe competed to lay on the most extravagent banquests, and consequentially the best chefs and their recipe collections became highly prized. However, it wasn`t until the nineteenth century that cooking and cookery books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to assembling, verifying, and writing down recipes for their fellow cooks to enjoy. When we get to the 20th century, cooking books are highly popular as a result of better eduction, people having increased free time and disposable income. The arrival of TV brings us TV cooks and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, permitting us all to search through thousands of recipes just like those on our web site. |
