The History of Recipes
Transcribed cooking instructions as a concept can be traced way back into the far past, in fact as far as the early Egyptians, and possibly even further. Having said that, sadly, these ancient recipes were just primitive hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the most ancient recipe found, according to academics is a series of ancient tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. During the time of the Romans a roman called Apicius assembled a collection of documents showing how to cook the recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals were divided into starters, main meal and dessert, something we still use today. Aspicius recounts how the early Romans used a wide range of aromatic flavors, including a few that are still present in modern kitchens like basil, fennel and parsley. Later on, in the 15th century, knights returning from the crusades brought back many new spices and herbs from the East, including spices such as parsley and basil. These new spices and herbs was responsible for an explosion in manuscripts on food, many of which are now in academic collections. The arrival of TV brings us celebrity TV chefs and the accompanying recipe books. And that brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes just like those on sites such as this. |
