The History of Recipes
Historians have traced the existance of recipes way back into the far past, in truth as far back into recorded history as the Egypt of the Pharoahs, and possibly even further than that. In practice though, mostly, these early recipes were just primitive hieroglyphic instructions for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to historians are some clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. During Roman times around 25BC a roman called Apicius assembled a collection of scripts which described recipes prepared by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the cooks of his times made use of a good variety of aromatic flavors, including many that are still in use today for example basil, mint and parsley. In the fifteenth century, knights returning from the crusades brought back many new foods and spices from middle-east cuisine, such as coriander, parsley, and basil. The introduction of these new tastes prompted an eruption in publications on food, the majority of which still exist in private cookery archives. Over the following few hundred years, the upper-class families of Wesstern Europe tried to lay on the most extravagent banquests, and because of this cooks and their recipes were much in demand. Notwithstanding that, it wasn`t until the 19th century that fine cookery and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collecting, trying out, and recording recipes of the day. Like it or not, the introduction of television brings us celebrity chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing everyone to search through massive numbers of recipes such as those found on sites such as this. |
