The History of Recipes
We can trace the history of `recipes` back into ancient history, at least as far into history as ancient Egypt, and maybe further still. In practice though, mostly, these early cook books were just simple hieroglyphic or cunieform recipes for preparing food.
In fact, the oldest recipe found, according to Professor Solomon Katz, are some stone tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. Progressing into Roman times around 25BC a man called Apicius created some scripts detailing recipes cooked by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, entrees and afters, something we still use today. This early Roman chef informs us how the cooks of his times used a good variety of spices, including many that are still in use today like bay, rue and dill. Later on in the 1400s, knights returning from the crusades brought back many spices and herbs from the East, including basil and coriander. The introduction of these new tastes prompted an outbreak in cookery books, most of which still exist in private libraries. For the next few years, the upper-class families of Europe competed to offer the most exotic meals, and as a result the best cooks and their recipe collections were highly sought after. Notwithstanding that, it wasn`t until the 1800s the formal cooking and recipe books really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collecting, testing, and recording recipes to help cooks of their time. The introduction of the TV brings us TV cookery programs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of the internet, allowing everyone to search through thousands of recipes such as those found on this recipe site. |
