The History of Recipes
Written cooking instructions as a concept can be found back into ancient history, certainly as far into history as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that maybe, sadly, these old cookbooks were just very simple hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the oldest recipe discovered, according to experts in ancient history are a few tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. Progressing into The time of the roman empire around 25BC a man called Apicius created some documents describing recipes cooked by the Romans. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvres, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the ancient cooks made use of many different herbs and spices, including a few you will know for example bay, fennel and parsley. In the 15th century, knights returning from the crusades brought back many foods and spices from the holy land, including spices like basil and coriander. These new spices and herbs created a torrent in manuscripts on cookery, the majority of which are kept safe in private collections. Over the following few centuries, the rich families of the West competed with each other to lay on the most extravagent banquests, and consequentially the best chefs and their recipe collections increased in prestige. Even so, it wasn`t until the nineteenth century that cooking and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to collating, verifying, and writing down recipes common in their social group. The arrival of TV brings us cooking programs and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, allowing us all to search through massive numbers of recipes like those on our web site. |
