The History of Recipes
Recipes as a concept can be found far back into ancient history, at least as far back into history as ancient Egypt, and maybe even further. However, mostly, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
Fascinatingly, the most ancient recipe discovered, according to experts in ancient history are a few clay tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. As we move into The time of the roman empire 25BC a roman called Apicius assembled a collection of scripts which described recipes cooked by his fellow Romans. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvre, entrees and afters, a style of dining still practiced today. He also recounts how the Roman chefs were skilled in the use of a wide range of aromatic flavors, including a few you will know like bay, mint and dill. In the 15th century, knights returning from the crusades brought back many new foods and spices from the holy land, such as basil and coriander. These new culinary innovations caused a surge in manuscripts on cookery, many of which are now in academic collections. Over the next few centuries, the upper-class families of Wesstern Europe tried to offer the most extravagent banquests, and consequentially cooks and their recipe collections increased in prestige. Notwithstanding that, it wasn`t until the 1800s the formal cooking and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to assembling, trying out, and writing down recipes that were common in the better off homes of the day. The introduction of television brings us celebrity TV chefs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, allowing us all to access massive numbers of recipes just like those on sites such as this. |
