The History of Recipes
Recipes as a concept can be traced far back into history, certainly as far into history as pharonic Egypt, and maybe further still. Interesting though that maybe, these, early cook books were just basic pictorial recipes for preparing meals.
In an interesting twist, the oldest recipe discovered, according to Professor Solomon Katz, are some clay tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. Continuing our culinary historical journey, we find a couple of interesting recipe books which were published in the 14th Century : a recipe book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Although the titles sound familiar, these two books are not about the curry that appears on menues today, but rather accounts of the types of food served to the upper classes of those days. Later on, in the 15th century, people returning from the crusades brought back many foods and spices from the holy land, including coriander, parsley, basil and rosemary. The introduction of these new herbs and spices created a torrent in manuscripts on food, some of which still exist in private libraries. Over the succeeding few hundred years, the powerful and rich houses competed with each other to lay on the most extravagent meals, and consequentially the best cooks and their collection of recipes were highly sought after. Even so, it was during the nineteenth century that formal cookery and recipe publications really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to assembling, testing, and writing down recipes for their fellow cooks to enjoy. When we get to the twentieth century, cook books were in high demand, as a result of better eduction, people having more spare time and being a little richer. The TV revolution gave us cooking programs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, permitting us all to search through massive numbers of recipes like those on this site. |
