The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions back into distant history, at least as far back into history as ancient Egypt, and possibly even further. Interesting though that maybe, mostly, these old records were just basic hieroglyphic or cunieform recipes for preparing food.
Interestingly, the oldest recipe discovered so far, according to historians is a series of stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. Progressing into The time of the romans around 25BC a man called Apicius compiled a number of scripts describing recipes prepared by the Romans. In his works, Apicius tells us how the roman meals were divided into hors d`oeuvres, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the ancient chefs used a good variety of herbs, including a few that are still present in modern kitchens like bay, rue and asafoetida. Later, in the 15th century, knights returning from the crusades brought us many spices and herbs from middle-east cuisine, including spices such as basil and coriander. The introduction of these new herbs and spices created an eruption in manuscripts on cookery, some of which are kept safe in private collections. By the advent of the 1900s, recipe publications are in great demand, mostly due to higher levels of literacy, more spare time and having more money. Like it or not, the introduction of TV brought us TV cookery programs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, permitting us all to search through thousands of recipes such as those found on this web site. |
