The History of Recipes
Written cooking instructions as a concept can be traced way back into distant history, in fact as far back into history as early Egypt, and maybe even further. Having said that, generally, these old cookbooks were just very simple hieroglyphic instructions for meal preparation.
Progressing into The time of the roman empire around 25BC a roman called Apicius assembled a few documents showing how to cook the recipes enjoyed by the Romans. In his works, he tells us how the roman meals were separated into appetizers, main course and dessert, something we still use today. Additionally, he describes how the chefs of Roman times were skilled in the use of many different herbs and spices, including many that are still in use today such as bay, fennel and parsley. In the 15th century, knights returning from the crusades brought back a variety of foods and herbs from middle-east cuisine, including spices such as basil and coriander. These new foods and spices led to an increase in recipe publications, most of which still exist in academic collections. The arrival of TV brings us TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everyone to access massive numbers of recipes like those on our site. |
