The History of Recipes
Written cooking instructions as a concept can be found back into antiquity, at least as far as the Egyptians, and quite possibly further than that. Having said that, mostly, these early cookbooks were just very basic pictorial recipes for preparing meals.
Fascinatingly, the oldest recipe in existence, according to Professor Solomon Katz, is a series of tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. Progressing into The time of the roman empire around 25BC a man called Apicius compiled a collection of documents describing recipes enjoyed by wealthy roman citizens. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the Roman chefs used a good variety of herbs and spices, including a few that are still present in modern kitchens for example bay, mint and dill. In the 15th century, the Crusaders brought back many foods, spices and herbs from Arab countries, including spices like coriander, parsley, and rosemary. The introduction of these new foods and spices caused an increase in recipe manuscripts, the majority of which are now in private cookery archives. When we get to the 1900s, cooking books were in high demand, due to more people being able to read, people having increased free time and being a little richer. The arrival of TV brought us cooking programs and the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing us all to access thousands of recipes such as those found on our web site. |
