The History of Recipes
Transcribed cooking instructions as a concept can be found way back into history, in truth as far back into recorded history as the Egypt of the Pharoahs, and possibly even further. Interesting though that is, sadly, these early cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Progressing into The time of the roman empire around 25BC a roman called Apicius compiled a collection of documents which described recipes enjoyed by wealthy Romans. He recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also tells us how the early Romans were skilled in the use of a wide range of spices, including a few you will know for example basil, rue and asafoetida. In the 15th century, knights returning from the crusades brought back many new foods and spices from middle-east cuisine, including spices such as coriander, parsley, and rosemary. These new spices and herbs created a surge in recipe publications, the majority of which are now in private libraries. The introduction of the TV gave us TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes like the ones you can find on sites such as the one you are reading now. |
