CRUST
16 graham cracker squares, finely crushed
8 tsp margarine, melted
FILLING
2 small pkgs. sugar-free vanilla pudding
3/4 cup lemon juice, fresh
2 tsp lemon rind, grated
2 small pkgs. sugar-free lemon jello
Directions
Mix graham crackers and margarine; spread evenly into 9" pie plate.
Bake at 350 for 10-12 minutes. Cool.
Prepare pudding according to package directions. Bring lemon juice
and rind to a boil; dissolve jello in lemon juice. Add this mixture
to pudding and mix well. Cool. Spoon into crust. Chill.
Each serving = 1 Br., 1 Fat, 1 Milk, 8 opt. cal.

The History of Recipes
It is quite possible to follow the history of written cooking instructions way back into antiquity, at least as far as the early Egyptians, and possibly even further than that. Interesting though that is, generally, these ancient cook books were just simple hieroglyphic instructions for food preparation.
The truth of the matter is, the oldest recipe in existence, according to experts in ancient history is a series of clay tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. As we move into Roman times around 25BC a roman called Apicius compiled a number of documents describing recipes enjoyed by his fellow Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into hors d`oeuvres, main meal and afters, a style of dining still practiced today. Aspicius recounts how the ancient chefs made use of a wide range of herbs, including some familiar names such as basil, rue and asafoetida. Later on in the 1400s, people returning from the crusades brought us many new spices and herbs from middle-east cuisine, such as basil and coriander. The introduction of these new herbs and spices prompted an eruption in recipe publications, the majority of which are now in academic collections. The arrival of television brings us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to search through massive numbers of recipes like those on our web site. |
