The History of Recipes
It is quite feasible to follow the history of recipes back into antiquity, in truth as far into history as early Egypt, and maybe even further. In practice though, in the main part, these ancient cook books were just primitive pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the most ancient recipe in existence, according to academics is a series of ancient tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Progressing into The time of the romans around 25BC a man called Apicius compiled a collection of documents which described recipes cooked by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were separated into hors d`oeuvres, entrees and dessert, something we still use today. He also recounts how the early Romans made use of a good variety of spices and herbs, including a few that are still present in modern kitchens like thyme, mint and dill. Moving on, there are two interesting recipe books which were published in the 1300s : a cookery book called `Forme of Cury`, and another titled `Curye on Inglish`. The titles are a little misleading though, these books are nothing to do with the indian food that is familiar to us all today, but instead descriptions of the types of meals served to the rich and wealthy people of the period. Later, in the 15th century, the Crusaders brought back many new foods and herbs from Arab cooking, including spices such as parsley, basil and rosemary. The introduction of these new tastes created a surge in recipe publications, most of which are kept safe in academic collections. During the next few hundred years, the powerful families of Europe tried to offer the most extravagent meals, and as a consequence, chefs and their collection of recipes were much in demand. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, testing, and recording recipes to allow everyone to enjoy them. By the time we get to the twentieth century, recipe publications were starting to become popular mostly as a result of more people being able to read, leisure time and having more disposable income. |
