1/3 cup tomato catsup
2 tsp lemon juice
5 cup sliced/peeled apples
1 (2 to 2-1/2 pounds)
3/4 cup granulated sugar
3/4 cup flour
1 tsp cinnamon
1/2 tsp ground allspice
1/3 cup softened butter
1 unbaked 9-inch pie shell
Directions
Blend ketchup & lemon juice; combine with apples. Combine sugar,
flour and cinnamon; cut in butter until thoroughly mixed. Fill pie
shell with apples; top with sugar mixture. Bake at 375 degrees F for
40 to 45 minutes, or until apples are cooked. Serve warm with ice
cream, if desired. Makes one 9-inch pie.

The History of Recipes
It is quite possible to prove the history of recipes way back into history, at least as far as ancient Egypt, and maybe further still. Interesting though that maybe, in the main part, these old recipes were just very simple hieroglyphic or cunieform instructions for preparing food.
During Roman times 25BC a roman called Apicius compiled a few documents describing recipes enjoyed by wealthy roman citizens. In his scrolls, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and dessert, a very modern way of dining. Aspicius tells us how the chefs of Roman times were skilled in the use of a good variety of herbs and spices, including a few that will be familiar to modern cooks such as bay, fennel and parsley. In the fifteenth century, people returning from the crusades brought us many foods and herbs from the East, including coriander, parsley, basil and rosemary. The introduction of these new herbs and spices caused an eruption in recipe publications, most of which are now in private collections. Like it or not, the introduction of television brings us cooking programs and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access massive numbers of recipes such as those found on our web site. |
