The History of Recipes
Experts have found proof that recipes existed far back into the distant past, at least as far into history as the Egyptians, and maybe even further. Interesting though that maybe, in the main part, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the oldest recipe discovered so far, according to academics are some stone tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. Progressing into The time of the romans around 25BC a man called Apicius compiled a collection of documents detailing recipes prepared by his fellow Romans. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. Aspicius describes how the Roman cooks were skilled in the use of many spices and herbs, including a few that will be familiar to modern cooks for example thyme, fennel and parsley. Later, in the 15th century, the Crusaders brought back a variety of foods and spices from Arab cuisine, such as coriander, parsley, and basil. These new spices and herbs prompted an explosion in recipe books, many of which are kept safe in private collections. During the following few centuries, the powerful families of Europe competed to serve the most extravagent banquests, and because of this cooks and their recipes were much in demand. Even so, it wasn`t until the 19th century that cookery and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collecting, testing, and publishing the recipes of their peers. Like it or not, the introduction of TV brought us TV cooks and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everyone to search through massive numbers of recipes such as those found on sites such as the one you are reading now. |
