The History of Recipes
Recipes as a concept can be found way back into history, at least as far back into recorded history as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that is, sadly, these ancient cook books were just basic hieroglyphic recipes for preparing meals.
In an interesting twist, the oldest recipe in existence, according to Professor Solomon Katz, is a series of tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Continuing our culinary historical journey, there were a couple of interesting books published in the fourteenth century - one book called `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are somewhat misleading tho`, these are not about the indian food that is popular today, but rather accounts of the types of food served to the rich. Later on, in the 15th century, knights returning from the crusades brought back many foods and spices from Arab cooking, including spices like coriander, parsley, and basil. These new foods and tastes prompted an increase in recipe manuscripts, many of which still exist in private cookery archives. Over the succeeding few centuries, the upper-class families of the West competed with each other to serve up the most extravagent banquests, and as a consequence, the best chefs and their recipes were greatly in demand. However, it wasn`t until the nineteenth century that fine cookery and recipe collections became really popular. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, trying out, and publishing recipes common in their social group. The TV revolution brings us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes such as those found on sites such as this. |
