The History of Recipes
We can read the history of `recipes` way back into the far past, at least as far as the ancient Egyptians, and potentially, even further back. Interesting though that is, these, old cook books were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the oldest recipe in existence, according to historians are a few tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. Later on, we have two interesting books which date from the fourteenth century - one book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Despite their titles, these are unconnected to the indian food that appears on menues today, but instead accounts of the types of meals cooked for the rich and powerful of that time. Later on in the 1400s, knights returning from the crusades brought back many spices and herbs from Arab cooking, including spices like coriander, parsley, and basil. The introduction of these new culinary ideas prompted an eruption in recipe publications, some of which are now in private cookery archives. For the next few years, the upper-class families of Wesstern Europe competed with each other to serve up the most exotic banquets, and as a consequence, the best chefs and their recipes were greatly in demand. However, it wasn`t until the 19th century that haute cuisine and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to assembling, verifying, and publishing the recipes that were being prepared for the better households. The introduction of the TV brings us cooking programs and the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, permitting us all to access thousands of recipes just like those on our web site. |
