The History of Recipes
It is possible to read the history of written recipes way back into ancient history, certainly as far back into recorded history as pharonic Egypt, and possibly even further than that. In practice though, these, early cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe discovered, according to Professor Solomon Katz, are a few ancient tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Later, we have a couple of cookery books which were published in the 14th Century - one book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, these books are unconnected to the indian food that is served today, but instead accounts of the types of meals on the tables of the rich people of the time. During the following few hundred years, the rich families of Europe competed to lay on the most extravagent banquests, and consequentially cooks and their recipes were highly sought after. However, it wasn`t until the 19th century that haute cuisine and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collecting, trying out, and recording recipes common in their social group. By the time we get to the 1900s, recipe books were highly popular as a result of better eduction, people having more spare time and being a little richer. |
