Directions
2 c Lowfat cottage cheese
1 c Buttermilk
1 TB Red wine vinegar
2 TB Parsley -- chopped
10 ml Garlic -- chopped
1/4 ts Salt
In blender or food processor, mix cottage cheese until smooth. Add
remaining ingredients and blend. Makes about 3 cups dressing for green
salads. Will keep in refrigerator for 2 weeks. Nutrition Analysis per
serving: 18 cal; 3gm pro; 1gm carb; trace fat; 110mg sod; 1mg chol.

The History of Recipes
Academics have found proof that recipes existed back into the distant past, in fact as far back as the Egypt of the Pharoahs, and maybe even further. However, these, ancient cookbooks were just primitive hieroglyphic instructions for preparing food.
Interestingly, the most ancient recipe discovered, according to experts are some ancient tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. Later on, in Roman times 25BC a man called Apicius assembled a number of scripts showing how to cook the recipes cooked by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into appetizers, main course and afters, a very modern way of dining. Aspicius also describes how the chefs of Roman times used a wide range of herbs, including a few that will be familiar to modern cooks for example bay, fennel and parsley. In the fifteenth century, the Crusaders brought back a variety of foods and spices from the holy lands, including spices such as parsley and basil. The introduction of these new foods and spices led to an increase in manuscripts on cookery, most of which are now in private cookery archives. Like it or not, the introduction of television brought us TV chefs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everyone to search through thousands of recipes just like those on the site you are now reading. |
