1 cup non-fat ricotta cheese --
1 processed to make sm
1/4 cup evaporated skim milk
1 to 2 drops
1 (no more than this b/c it is
1 potent)
2 oz parmesana reggiano --
1 freshly grated
1 freshly ground pepper to
1 taste
1 spray olive oil
1 ground nutmeg -- dash
1 liquid smoke
Directions
Take the processed ricotta & place in sauce pan that has been sprayed
with olive oil lightly. Slowly heat up the cheese to just below
boiling, add the liquid smoke & then the milk & Parmesan cheese. Stir
until creamy & slightly thickened. Add pepper to taste. Place on top
of favorite pasta. Add grated nutmeg & toss to blend with pasta.

The History of Recipes
It is possible to read the history of `recipes` back into antiquity, in truth as far back into recorded history as the ancient Egyptians, and possibly even further. Having said that, in the main part, these old recipes were just very basic hieroglyphic instructions for preparing meals.
In fact, the most ancient recipe discovered, according to experts is a collection of stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated. Later on, in The time of the roman empire 25BC a man called Apicius compiled a collection of documents which described recipes prepared by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into starters, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the ancient Romans were skilled in the use of many herbs and spices, including many that are still in use today like bay, rue and dill. For the decades that followed, the powerful families of Europe tried to lay on the most exotic banquets, and consequentially cooks and their recipe collections were highly sought after. Notwithstanding that, it was during the nineteenth century the formal cooking and recipe publications became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to collating, verifying, and recording recipes to help cooks of their time. By the time we get to the 1900s, cooking books were increasing in popularity mostly due to better eduction, more free time and disposable income. The arrival of television brought us celebrity chefs and the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes like the ones you can find on our site. |
