1 lb feta cheese, cut into cubes
1 cup fresh black greek olives, pi
2 roasted red bell peppers
1/2 cup olive oil
1 small red onion, diced
2 tsp minced garlic
1 tbsp balsamic vinegar
2 tsp fresh thyme
1 salt and freshly ground blac
1 lemon juice
Directions
*Combine the peppers, feta and olives in a large bowl. Add the olive
oil and toss gently. Add the remaining ingredients and toss gently
again. Adjust seasonings, cover and chill at least 5 hours before
serving.
Serve this with toasted pita bread as an appetizer. Fran/CA

The History of Recipes
Recipes as a concept can be found way back into the far past, certainly as far back into history as ancient Egypt, and quite possibly further than that. Interesting though that is, these, early cookbooks were just simple hieroglyphic instructions for preparing meals.
Progressing into Roman times 25BC a man called Apicius created some scripts detailing recipes enjoyed by wealthy roman citizens. In his scrolls, he recounts how the meals of wealthy Romans were divided into appetizers, entrees and dessert, a style of dining still practiced today. He also tells us how the Roman chefs made use of many aromatic flavours, including some familiar names like thyme, mint and asafoetida. Later on, in the 15th century, knights returning from the crusades brought back a variety of spices and herbs from the East, including spices like coriander, basil and rosemary. The introduction of these new culinary ideas led to a surge in publications on food, many of which still exist in private cookery archives. When we get to the twentieth century, cooking books are highly popular mostly due to increased literacy, people having increased spare time and a general increase in wealth. |
