3 cup flour, unbleached, sifted
1/3 cup cocoa, baking
3 tsp baking soda
1/2 tsp salt
1 1/2 cup mayonnaise or salad dressing
1 1/2 cup sugar
1 1/2 cup ; cold water
1 1/2 tsp vanilla extract
FLUFFY CHOCOLATE FROSTING
1 cup brown sugar, packed
3 tbsp half and half or light cream
3 tbsp butter or regular margarine
1/3 cup chocolate chips, semisweet
1/2 tsp vanilla extract
Directions
Sift together flour, cocoa, baking soda and salt; set aside. Combine
mayonnaise and sugar in a mixing bowl. Beat with electric mixer at
medium speed until blended. Gradually beat in cold water and vanilla.
Add dry ingredients to mayonnaise mixutre, beating until well
blended, about 2 minutes. Pour batter into greased 13 x 9 x 2-inch
baking pan. Bake in preheated 350 degree F. oven 40 minutes or until
cake tests done. Cool in pan on rack. Frost with Fluffy Chocolate
Frosting. Cut in squares. FLUFFY CHOCOLATE FROSTING: Combine brown
sugar, light cream, and butter in a saucepan. Cook over medium heat,
stirring constantly, until mixture comes to a boil. Boil 1 minute.
Remove from heat. Stir in chocolate chips and vanilla. Beat with
electric mixer at high speed until of a spreading consistency. NOTE:

The History of Recipes
It is quite possible to follow the history of written cooking instructions far back into the distant past, at least as far as the Egypt of the Pharoahs, and possibly even further. However, sadly, these early recipes were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
The truth of the matter is, the oldest recipe discovered, according to food historians is a collection of stone tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful. As we move into Roman times around 25BC a roman called Apicius created a few documents describing recipes enjoyed by the Romans. In his scrolls, he describes how the meals of wealthy Romans were split into hors d`oeuvres, entrees and afters, something that is very familiar to us today. Additionally, he recounts how the ancient chefs used a good variety of aromatic flavors, including some that we all recognise such as thyme, mint and asafoetida. During the following few centuries, the upper classes competed with each other to serve the most extravagent banquests, and consequentially cooks and their collection of recipes could command a high salary. Nevertheless, it wasn`t until the 1800s that formal cookery and recipe publications became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collecting, trying out, and writing down the recipes that were being prepared for the better households. By the advent of the 1900s, cookery books are in high demand, as a result of better eduction, more free time and having more money to spend. |
