The History of Recipes
Food historians have tracked the existence of recipes far back into distant history, at least as far back as early Egypt, and potentially, even further back. In practice though, in the main part, these ancient records were just simple hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the most ancient recipe in existence, according to academics is a collection of stone tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. Progressing into The time of the romans 25BC a man called Apicius compiled some documents showing how to cook the recipes enjoyed by his fellow Romans. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, something we still use today. Aspicius tells us how the ancient Romans were skilled in the use of many different spices, including some familiar names like thyme, rue and parsley. As our culinary historical trip moves to more modern times we have some books from the fourteenth century - a cookery book entitled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Despite their titles, these have no connection with the curry that is familiar to us all today, but instead descriptions of the types of meals cooked for the upper classes. In the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from Arab countries, including spices like coriander, basil and rosemary. The introduction of these new culinary ideas prompted an outbreak in manuscripts on cooking, many of which are kept safe in academic collections. Over the next few centuries, the wealthy families of Europe strove to serve up the best banquets, and as a consequence, the best chefs and their recipes were at a premium. However, it wasn`t until the 1800s that cooking and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to assembling, testing, and writing down recipes that were common in the better off homes of the day. By the arrival of the twentieth century, recipe books were greatly in demand due to more people being able to read, people having increased spare time and having more disposable income. The introduction of television brought us TV chefs and the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes like those on this recipe site. |
