The History of Recipes
Written cooking instructions as an idea can be tracked way back into antiquity, in truth as far back into recorded history as the ancient Egyptians, and possibly even further than that. Interesting though that maybe, generally, these early cookbooks were just very basic hieroglyphic or cunieform instructions for preparing food.
In an interesting twist, the most ancient recipe found, according to Professor Solomon Katz, is a series of stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. Later on, in The time of the romans 25BC a roman called Apicius compiled a number of documents which described recipes enjoyed by wealthy Romans. In his publication, he recounts how the roman meals were divided into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the cooks of Roman times made use of many aromatic flavors, including a few you will know for example basil, rue and parsley. Later on, in the 15th century, people returning from the crusades brought us many new spices and herbs from the Middle-East, such as parsley and basil. These new spices and herbs prompted an increase in manuscripts on food, the majority of which still exist in private cookery archives. When we get to the 20th century, cookery books were increasing in popularity mostly due to increased literacy, more free time and being a little richer. The TV revolution brings us celebrity chefs and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes like the ones you can find on sites such as the one you are reading now. |
