The History of Recipes
Recipes as an idea can be found back into distant history, in fact as far into history as the early Egyptians, and possibly even further. Interesting though that is, these, early records were just simple hieroglyphic or cunieform instructions for meal preparation.
Later on, in The time of the romans 25BC a man called Apicius compiled a number of scripts showing how to cook the recipes cooked by wealthy Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into appetizers, entrees and dessert, something we still use today. Aspicius describes how the early Romans made use of many different aromatic flavours, including some that we all recognise for example basil, fennel and parsley. Over the succeeding few centuries, the wealthy families of Wesstern Europe strove to serve up the most exotic banquets, and as a result cooks and their collection of recipes could command a high salary. However, it was during the 1800s that haute cuisine and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, trying out, and writing down recipes of the day. When we get to the 20th century, recipe publications are greatly in demand due to increased literacy, more free time and a general increase in wealth. |
