The History of Recipes
Written cooking instructions as an idea can be tracked far back into the far past, in fact as far as the early Egyptians, and maybe further still. Having said that, in the main part, these ancient records were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Later on, in The time of the romans 25BC a roman called Apicius created some documents showing how to cook the recipes prepared by wealthy roman citizens. In his scrolls, he tells us how the roman meals were separated into hors d`oeuvres, main course and dessert, something that is very familiar to us today. Aspicius informs us how the Romans used many spices and herbs, including a few you will know for example thyme, fennel and dill. Over the succeeding few centuries, the powerful and rich strove to lay on the best banquets, and as a result the best cooks and their collection of recipes became highly prized. Nevertheless, it wasn`t until the nineteenth century that formal cookery and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and writing down recipes of the day. When we get to the 20th century, cookbooks are starting to become popular due to increased literacy, people having more leisure time and disposable income. |
