The History of Recipes
It is quite feasible to prove the history of recipes back into antiquity, in fact as far into history as the early Egyptians, and possibly even further than that. Having said that, sadly, these early cook books were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
During Roman times 25BC a man called Apicius created a number of documents showing how to cook the recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into appetizers, main course and dessert, something we still use today. Additionally, he tells us how the ancient chefs were skilled in the use of a good variety of spices, including a few you will know for example bay, mint and parsley. Later, in the 15th century, knights returning from the crusades brought us a variety of foods and spices from Arab cooking, including spices such as parsley and basil. The introduction of these new tastes created an increase in recipe manuscripts, most of which still exist in private cookery archives. By the time we get to the twentieth century, cooking publications are greatly in demand as a result of more people being able to read, leisure time and having more money. |
