The History of Recipes
We are able to follow the history of written recipes way back into the far past, certainly as far back into recorded history as pharonic Egypt, and possibly even further than that. However, in the main part, these early recipes were just very simple hieroglyphic recipes for preparing meals.
In fact, the oldest recipe discovered so far, according to historians are a few ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. Later on, there were two interesting books which were published in the 14th Century : one book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, these are not about the indian food that is served today, but instead descriptions of the types of food cooked for the rich people of those days. Later on in the 1400s, people returning from the crusades brought us many foods and spices from Arab cuisine, including coriander, parsley, basil and rosemary. The introduction of these new culinary ideas prompted a torrent in recipe manuscripts, the majority of which are now in private collections. For the centuries that followed, the upper classes competed with each other to serve the most extravagent banquests, and because of this the best cooks and their collection of recipes were greatly in demand. However, it wasn`t until the nineteenth century that haute cuisine and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to assembling, trying out, and publishing recipes common in their social group. By the advent of the twentieth century, cookery books are in high demand, as a result of higher levels of literacy, people having more spare time and having more money. The introduction of the TV gave us cooking programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes just like those on sites such as this. |
