The History of Recipes
Written cooking instructions as a concept can be traced back into antiquity, in truth as far into history as pharonic Egypt, and quite possibly further than that. Interesting though that is, generally, these early cook books were just simple pictorial recipes for preparing meals.
The truth of the matter is, the oldest recipe in existence, according to academics are some stone tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. As we move on, we have a couple of cookery books which appeared in the 14th Century : a cookery book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Perhaps surprisingly, these books have no connection with the curry that is popular today, but rather recipes for the types of food on the menus of the rich and wealthy people of those days. Later, in the fifteenth century, knights returning from the crusades brought us a variety of foods and herbs from Arab countries, such as parsley, basil and rosemary. These new foods and spices created an explosion in manuscripts on cooking, many of which still exist in private collections. During the next few centuries, the rich families of Europe competed to lay on the most exotic meals, and as a consequence, cooks and their collection of recipes were much in demand. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, trying out, and writing down recipes to help cooks of their time. The revolution that is television brought us TV cooks and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes like those on our site. |
