The History of Recipes
We are able to read the history of `recipes` far back into history, in truth as far back as the ancient Egyptians, and maybe further still. Interesting though that is, these, early cookbooks were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
As we move into The time of the romans around 25BC a roman called Apicius wrote a number of scripts which described recipes cooked by the Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into starters, main meal and dessert, something we still use today. Aspicius describes how the Romans were skilled in the use of a good variety of spices, including a few that will be familiar to modern cooks for example basil, fennel and asafoetida. Later, in the fifteenth century, people returning from the crusades brought back many new spices and herbs from Arab cooking, including rosemary and coriander. The introduction of these new culinary ideas was responsible for an explosion in manuscripts on food, most of which are now in academic collections. The revolution that is television gave us celebrity TV chefs and the accompanying recipe books. And that brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes such as those found on this web site. |
