The History of Recipes
We can read the history of `recipes` back into ancient history, in fact as far back into recorded history as early Egypt, and possibly even further. Having said that, generally, these ancient cook books were just very basic pictorial instructions for preparing meals.
In fact, the most ancient recipe discovered, according to food historians are a few ancient tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. Later on, in Roman times around 25BC a man called Apicius created some documents showing how to cook the recipes enjoyed by wealthy Romans. In his works, Apicius recounts how the roman meals were divided into starters, main course and dessert, something that is very familiar to us today. This early Roman chef describes how the ancient chefs made use of many spices and herbs, including some familiar names such as thyme, mint and parsley. Later on, we have a couple of books which were published in the 1300s : a book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Perhaps surprisingly, they are not about the indian food that appears on menues today, but instead descriptions of the types of meals eaten by the upper classes of the time. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and herbs from the holy lands, such as basil and rosemary. The introduction of these new foods and spices was responsible for an increase in recipe publications, some of which are now in academic collections. For the next few years, the rich families of the West strove to serve the most extravagent meals, and consequentially cooks and their collection of recipes could command a high salary. Nevertheless, it was during the nineteenth century that haute cuisine and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, testing, and writing down recipes for their fellow cooks to enjoy. By the advent of the twentieth century, cooking publications were greatly in demand mostly as a result of better eduction, more free time and having more money to spend. The introduction of the TV brings us TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to search through thousands of recipes like the ones you can find on this site. |
