Aspicius informs us how the ancient cooks used many aromatic flavours, including many that are still in use today like basil, fennel and parsley. Over the next few centuries, the powerful and rich competed with each other to serve the most extravagent meals, and because of this the best cooks and their recipes were at a premium. Nevertheless, it was during the 1800s that cooking and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collating, trying out, and recording recipes to help cooks of their time. By the arrival of the twentieth century, cookbooks were in high demand, as a result of higher levels of literacy, people having more leisure time and having more disposable income. The introduction of television gave us cooking programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing us all to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
