The History of Recipes
We can track the history of meal recipes way back into ancient history, at least as far back into recorded history as the Egyptians, and maybe further still. In practice though, sadly, these early cookbooks were just very simple pictorial instructions for preparing food.
During Roman times around 25BC a man called Apicius compiled a number of scripts describing recipes enjoyed by wealthy Romans. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvre, entrees and desserts, a very modern way of dining. Additionally, he describes how the early Romans made use of a good variety of spices and herbs, including some that we all recognise like thyme, rue and dill. Over the following few hundred years, the wealthy families of Wesstern Europe competed with each other to serve up the most exotic meals, and as a consequence, the best chefs and their collection of recipes were highly sought after. Notwithstanding that, it wasn`t until the 1800s that fine cooking and recipe books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, testing, and recording recipes to allow everyone to enjoy them. By the arrival of the 20th century, recipe publications are in high demand, mostly due to more people being able to read, people having increased free time and being a little richer. |
