The History of Recipes
It is possible to track the history of written recipes way back into history, at least as far back into recorded history as the ancient Egyptians, and maybe further still. In practice though, these, early records were just simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the oldest recipe discovered so far, according to academics are a few tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated and blissful. Later on, in The time of the romans 25BC a roman called Apicius created a number of documents detailing recipes cooked by wealthy Romans. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvre, entrees and desserts, a very modern way of dining. He also recounts how the ancient Romans were skilled in the use of a wide range of aromatic flavours, including a few that will be familiar to modern chefs for example basil, mint and dill. Later on, in the 15th century, people returning from the crusades brought back many foods and herbs from Arab cuisine, such as coriander, parsley, basil and rosemary. These new herbs and spices prompted a surge in books on cookery, the majority of which are kept safe in private libraries. When we get to the 20th century, cookbooks were in great demand, mostly as a result of higher levels of literacy, people having more spare time and having more disposable income. The TV revolution gave us TV cookery programs and the recipe books that accompanied them. And that neatly brings us to the present day and the internet revolution, permitting everyone to access massive numbers of recipes just like those on sites such as the one you are reading now. |
