The History of Recipes
We can trace the history of `recipes` way back into antiquity, at least as far as ancient Egypt, and potentially, even further back. Interesting though that maybe, these, early records were just primitive hieroglyphic or cunieform instructions for food preparation.
In fact, the oldest recipe found, according to historians are a few stone tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire 25BC a roman called Apicius wrote some documents describing recipes cooked by his fellow Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the cooks of his times used many different aromatic flavors, including a few that are still present in modern kitchens for example thyme, fennel and asafoetida. For the centuries that followed, the powerful and wealthy houses competed with each other to lay on the most extravagent banquests, and as a result the best chefs and their collection of recipes were greatly in demand. However, it wasn`t until the 19th century that formal cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collating, trying out, and recording recipes of the day. The introduction of the TV gave us cooking programs and the demand for the spin-off recipe books. And that brings us to the present day and the internet revolution, allowing everyone to access thousands of recipes like those on sites such as this. |
