The History of Recipes
We can read the history of written recipes far back into the distant past, at least as far back into history as the early Egyptians, and possibly even further. However, these, old cook books were just very basic hieroglyphic instructions for meal preparation.
In fact, the oldest recipe in existence, according to historians is a collection of ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. Progressing into Roman times around 25BC a roman called Apicius created a collection of scripts describing recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, a very modern way of dining. This early Roman chef informs us how the chefs of Roman times were skilled in the use of a wide range of herbs and spices, including a few you will know like basil, rue and dill. For the next few years, the upper classes competed with each other to offer the most exotic banquets, and as a consequence, chefs and their recipes were greatly in demand. Nevertheless, it wasn`t until the 1800s that formal cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to assembling, verifying, and writing down recipes that were common in the better off homes of the day. By the advent of the twentieth century, cookery books are in great demand, mostly due to more people being able to read, more spare time and having more money. The introduction of the TV gave us TV cookery programs and the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing everybody to access massive numbers of recipes just like those on our web site. |
