The History of Recipes
Academics have proved the existence of recipes back into ancient history, in fact as far as ancient Egypt, and possibly even further. However, generally, these early cook books were just primitive pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the most ancient recipe found, according to academics is a series of clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. Later on, there were two interesting recipe books which appeared in the 1300s : a cookery book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Surprisingly, they are nothing to do with the indian curry that is familiar to us all today, but instead recipes for the types of food on the tables of the rich and powerful of the time. For the centuries that followed, the upper-class families of the West tried to offer the most exotic meals, and as a result chefs and their collection of recipes were at a premium. Nevertheless, it was during the 1800s that cookery and recipe books became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, trying out, and writing down popular recipes of the day. By the time we get to the 20th century, cookery publications were starting to become popular mostly as a result of increased literacy, leisure time and having more disposable income. |
