The History of Recipes
Experts have proved the existance of recipes far back into the far past, in fact as far into history as the ancient Egyptians, and possibly even further than that. Interesting though that is, generally, these ancient records were just basic hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the most ancient recipe discovered, according to experts in ancient history are some ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. During the time of the Roman Empire a roman called Apicius created a number of documents showing how to cook the recipes cooked by wealthy Romans. In his works, he recounts how the roman meals were split into hors d`oeuvres, main course and dessert, something we still use today. Aspicius also tells us how the Romans used a good variety of aromatic flavours, including some familiar names such as bay, mint and dill. In the fifteenth century, people returning from the crusades brought back a variety of spices and herbs from the holy land, such as rosemary and coriander. The introduction of these new culinary ideas caused an increase in recipe publications, most of which still exist in academic collections. For the centuries that followed, the upper-class families of Europe competed with each other to serve up the best banquets, and consequentially the best cooks and their recipes increased in prestige. Even so, it was during the nineteenth century that fine cookery and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collating, verifying, and publishing recipes to help cooks of their time. The introduction of the TV brings us TV cookery programs and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes like the ones you can find on our site. |
