The History of Recipes
It is possible to track the history of written recipes far back into the far past, at least as far back as early Egypt, and potentially, even further back. In practice though, mostly, these early records were just primitive hieroglyphic recipes for food preparation.
In fact, the oldest recipe found, according to Professor Solomon Katz, are some ancient tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Later, we find two recipe books which were published in the fourteenth century ; one book titled `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, they have no connection with the indian food that is popular today, but instead descriptions of the types of meals enjoyed by the rich and wealthy people of that time. For the decades that followed, the powerful and rich competed to offer the most extravagent meals, and as a result the best chefs and their recipe collections were highly sought after. Notwithstanding that, it was during the 19th century that haute cuisine and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, verifying, and publishing recipes for their fellow cooks to enjoy. By the time we get to the 1900s, cookbooks are in great demand, mostly as a result of increased literacy, people having increased spare time and being a little richer. |
