The History of Recipes
It is actually possible to trace the history of written cooking instructions far back into ancient history, in fact as far back into recorded history as early Egypt, and potentially, even further back. Having said that, mostly, these ancient cookbooks were just very simple pictorial recipes for preparing food.
The truth of the matter is, the most ancient recipe discovered, according to historians is a collection of tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated. Moving on, there were a couple of books which appeared in the fourteenth century ; one book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these two books are nothing to do with the curry that we all know today, but rather recipes for the types of food on the menues of the upper classes of those days. Later, in the 15th century, people returning from the crusades brought us a variety of foods and herbs from the holy land, including spices like parsley and basil. The introduction of these new foods and spices created a surge in manuscripts on cooking, the majority of which still exist in private libraries. During the following few centuries, the rich and powerful families of the West strove to serve the most extravagent meals, and consequentially the best chefs and their recipe collections were greatly in demand. Notwithstanding that, it was during the 1800s that cooking and cookery books became really popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to assembling, testing, and recording recipes to help cooks of their time. By the advent of the 1900s, cookery books are greatly in demand mostly as a result of better eduction, people having increased leisure time and having more money. The revolution that is television gave us TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to search through thousands of recipes just like those on this recipe site. |
