The History of Recipes
It is quite feasible to follow the history of written cooking instructions far back into history, at least as far back as the Egypt of the Pharoahs, and maybe even further. Interesting though that maybe, generally, these old cookbooks were just very simple hieroglyphic or cunieform recipes for food preparation.
Interestingly, the oldest recipe discovered so far, according to experts is a collection of stone tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. Closer to modern times, we find two recipe books published in the 1300s ; a recipe book entitled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Amusingly, they are nothing to do with the curry that is popular today, but instead recipes for the types of meals on the menues of the upper classes of the time. During the succeeding few centuries, the powerful and wealthy competed to serve up the most extravagent banquests, and because of this chefs and their recipe collections were highly sought after. Even so, it was during the 1800s that formal cookery and recipe collections became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, verifying, and recording the recipes of their peers. By the time we get to the twentieth century, cook books were in great demand, as a result of higher levels of literacy, increased leisure time and disposable income. |
