The History of Recipes
Written recipes as an idea can be observed far back into the distant past, certainly as far back into recorded history as the ancient Egyptians, and maybe even further. Interesting though that is, these, early cook books were just very simple pictorial instructions for preparing meals.
Much later, in Roman times a roman called Apicius created a collection of scripts detailing recipes enjoyed by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and dessert, a style of dining still practiced today. He also recounts how the ancient chefs used many aromatic flavours, including a few that will be familiar to modern cooks for example thyme, rue and dill. Later on, in the 15th century, people returning from the crusades brought us a variety of spices and herbs from Arab cuisine, including spices such as coriander, parsley, and rosemary. The introduction of these new culinary ideas caused a surge in recipe manuscripts, many of which are kept safe in private libraries. When we get to the twentieth century, cookery books are highly popular mostly due to higher levels of literacy, increased leisure time and being a little richer. |
