The History of Recipes
Experts have tracked the existance of recipes way back into ancient history, in truth as far back as the ancient Egyptians, and potentially, even further back. However, these, early cook books were just simple pictorial recipes for meal preparation.
Interestingly, the most ancient recipe discovered, according to Professor Solomon Katz, is a series of tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Later on, in Roman times 25BC a man called Apicius compiled some scripts which described recipes cooked by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the Romans made use of a wide range of spices, including a few that are still present in modern kitchens like thyme, rue and dill. Closer to modern times, we have two books dating from the fourteenth century - one book called `Forme of Cury`, and another titled `Curye on Inglish`. Don`t be fooled by the titles though, these have no connection with the indian food that is served today, but rather recipes for the types of meals prepared by the cooks of the rich and powerful of that period. In the fifteenth century, knights returning from the crusades brought us many new spices and herbs from the holy lands, including spices like coriander, basil and rosemary. The introduction of these new foods and spices prompted an outbreak in recipe publications, some of which still exist in private collections. Like it or not, the introduction of television brought us celebrity TV chefs and the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everybody to search through massive numbers of recipes just like those on this web site. |
