The History of Recipes
Food historians have tracked the existence of recipes far back into the distant past, in truth as far back into recorded history as pharonic Egypt, and maybe further still. Interesting though that is, in the main part, these early cookbooks were just basic hieroglyphic recipes for preparing food.
Fascinatingly, the most ancient recipe discovered, according to experts in ancient history are some stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. As we move into The time of the roman empire 25BC a roman called Apicius created a few scripts which described recipes enjoyed by wealthy Romans. In his scrolls, he recounts how the meals were divided into appetizers, main meal and afters, something we still use today. Aspicius also recounts how the ancient chefs were skilled in the use of a wide range of aromatic flavours, including some familiar names such as bay, fennel and asafoetida. Over the next few centuries, the families of Europe tried to serve the most extravagent banquests, and consequentially the best cooks and their recipe collections increased in prestige. However, it was during the 19th century that formal cookery and recipe books became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to assembling, trying out, and writing down recipes for their fellow cooks to enjoy. By the arrival of the twentieth century, cookbooks were increasing in popularity as a result of better eduction, people having more spare time and a general increase in wealth. |
