The History of Recipes
It is possible to trace the history of meal recipes back into the far past, certainly as far into history as early Egypt, and potentially, even further back. In practice though, in the main part, these ancient records were just very simple hieroglyphic or cunieform instructions for preparing meals.
Later on, in The time of the roman empire 25BC a man called Apicius created a few documents describing recipes cooked by his fellow Romans. He describes how the meals of wealthy Romans were split into hors d`oeuvres, main course and desserts, a style of dining still practiced today. He also informs us how the early Romans used many different spices, including a few that will be familiar to modern cooks such as thyme, mint and asafoetida. During the following few hundred years, the rich families of Wesstern Europe competed with each other to lay on the most extravagent meals, and as a consequence, the best chefs and their recipe collections became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that cookery and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collating, testing, and publishing popular recipes of the day. By the time we get to the 1900s, cooking publications are in high demand, mostly as a result of more people being able to read, people having increased leisure time and disposable income. |
