The History of Recipes
Food historians have tracked the existence of recipes far back into distant history, in truth as far back into history as pharonic Egypt, and maybe even further. Interesting though that maybe, generally, these early records were just very simple pictorial recipes for meal preparation.
Fascinatingly, the most ancient recipe discovered, according to food historians is a series of stone tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. As we move into The time of the roman empire 25BC a roman called Apicius wrote a collection of documents which described recipes enjoyed by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into starters, entrees and afters, something that is very familiar to us today. Additionally, he recounts how the ancient chefs made use of many aromatic flavors, including a few that are still present in modern kitchens such as basil, fennel and asafoetida. Over the next few centuries, the powerful and wealthy tried to serve the most extravagent banquests, and consequentially chefs and their recipes were at a premium. However, it was during the 1800s that cooking and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, trying out, and recording popular recipes of the day. By the arrival of the twentieth century, cookbooks are increasing in popularity as a result of better eduction, increased leisure time and having more money to spend. |
