The History of Recipes
Experts have tracked the existance of recipes far back into the distant past, in truth as far back into recorded history as the ancient Egyptians, and quite possibly further than that. Interesting though that is, generally, these early recipes were just simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, are some ancient tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful and blissful. Later on, in Roman times 25BC a roman called Apicius created a few documents which described recipes enjoyed by wealthy Romans. In his publication, he tells us how the roman meals were separated into starters, main meal and afters, something we still use today. Additionally, he describes how the cooks of his times made use of a wide range of aromatic flavors, including many that are still in use today such as thyme, rue and parsley. During the succeeding few hundred years, the upper classes tried to serve the most exotic banquets, and because of this the best chefs and their collection of recipes were greatly in demand. However, it was during the 19th century the formal cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to assembling, trying out, and recording the recipes that were being prepared for the better households. By the arrival of the 1900s, cookery books are increasing in popularity mostly due to higher levels of literacy, people having increased free time and being a little richer. Like it or not, the introduction of television gave us celebrity chefs and the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, allowing everyone to search through massive numbers of recipes just like those on sites such as the one you are reading now. |
