The History of Recipes
It is possible to read the history of `recipes` way back into the distant past, at least as far into history as the Egyptians, and possibly even further. Having said that, generally, these ancient records were just basic hieroglyphic or cunieform recipes for meal preparation.
Later on, in The time of the roman empire 25BC a man called Apicius assembled a number of documents detailing recipes cooked by the Romans. In his scrolls, he recounts how the meals were split into hors d`oeuvre, main meal and dessert, a very modern way of dining. Aspicius also informs us how the early Romans were skilled in the use of a wide range of aromatic flavours, including a few that are still present in modern kitchens for example bay, rue and asafoetida. For the decades that followed, the powerful families of Wesstern Europe competed to offer the best banquets, and consequentially chefs and their recipes could command a high salary. Nevertheless, it wasn`t until the 19th century that fine cookery and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, trying out, and recording the recipes of their peers. By the time we get to the 1900s, recipe books are in great demand, due to better eduction, increased leisure time and having more money to spend. |
