The History of Recipes

Written cooking instructions as an idea can be tracked way back into antiquity, certainly as far as the Egypt of the Pharoahs, and potentially, even further back. However, mostly, these old cook books were just very basic hieroglyphic instructions for meal preparation.

The truth of the matter is, the most ancient recipe discovered, according to historians is a collection of stone tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful.

Later on, in The time of the roman empire around 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes prepared by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvres, main meal and desserts, a style of dining still practiced today. He also recounts how the Romans used many aromatic flavours, including a few that will be familiar to modern chefs like thyme, fennel and asafoetida.

Later, in the fifteenth century, knights returning from the crusades brought back many new spices and herbs from the holy lands, including spices such as coriander, parsley, basil and rosemary. These new foods and spices created an explosion in books on cooking, many of which still exist in private collections.

During the following few hundred years, the upper-class families of the West strove to lay on the most exotic meals, and consequentially chefs and their collection of recipes were greatly in demand. Nevertheless, it wasn`t until the 19th century the formal cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collating, trying out, and publishing recipes that were common in the better off homes of the day.

The arrival of television brings us celebrity TV chefs and the recipe books that accompanied them.

And that neatly brings us to the present day and the internet revolution, permitting everybody to search through thousands of recipes like the ones you can find on our site.
