This is the best loaf of light, airy bread that I have made in my
ABM. I wish I could say what ABM Bread book it came from, but I got
the recipe before I was concerned about such things. Never made it
until now.

The History of Recipes
Transcribed cooking instructions as a concept can be observed far back into antiquity, in truth as far back as early Egypt, and possibly even further than that. Interesting though that maybe, in the main part, these ancient records were just primitive hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the most ancient recipe found, according to experts in ancient history are a few ancient tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. Much later, in Roman times a roman called Apicius wrote some scripts which described recipes cooked by the Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvres, main course and dessert, a very modern way of dining. Aspicius recounts how the early Romans were skilled in the use of many herbs and spices, including a few that will be familiar to modern chefs such as thyme, mint and parsley. Later on, in the 15th century, people returning from the crusades brought back many new foods and herbs from the East, such as coriander, parsley, basil and rosemary. The introduction of these new herbs and spices created an increase in recipe publications, the majority of which are kept safe in private libraries. Over the succeeding few hundred years, the powerful and wealthy houses tried to offer the most exotic meals, and as a result cooks and their collection of recipes increased in prestige. Even so, it wasn`t until the nineteenth century that haute cuisine and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collating, verifying, and publishing popular recipes of the day. The TV revolution gave us celebrity TV chefs and the recipe books that accompanied them. And that brings us to the present day and the invention of the internet, permitting everybody to access thousands of recipes like the ones you can find on our site. |
