The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions far back into antiquity, certainly as far back into recorded history as the ancient Egyptians, and possibly even further. Interesting though that is, generally, these early records were just simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the oldest recipe found, according to Professor Solomon Katz, are some ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. Progressing into The time of the romans 25BC a roman called Apicius assembled a few documents detailing recipes cooked by wealthy Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvre, main meal and dessert, a very modern way of dining. Aspicius recounts how the ancient chefs made use of a wide range of herbs, including a few you will know like bay, mint and parsley. As our culinary historical trip moves to more modern times there were two recipe books dating from the 14th Century : one book titled `Forme of Cury`, and another named `Curye on Inglish`. Amusingly, these have no connection with the indian food that we all know today, but instead accounts of the types of meals on the menus of the rich and wealthy people of those days. In the 15th century, knights returning from the crusades brought back many spices and herbs from the East, such as basil and rosemary. These new spices and herbs prompted an explosion in recipe publications, the majority of which are kept safe in private cookery archives. By the arrival of the twentieth century, cookery publications were in great demand, mostly due to increased literacy, more free time and being a little richer. |
