The History of Recipes
Transcribed cooking instructions as a concept can be found back into history, in fact as far back into history as early Egypt, and quite possibly further than that. Having said that, mostly, these ancient recipes were just basic hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the most ancient recipe found, according to historians are some tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `blissful`. Progressing into The time of the roman empire around 25BC a man called Apicius compiled a few scripts showing how to cook the recipes enjoyed by the Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and afters, something we still use today. He also tells us how the Romans were skilled in the use of a good variety of aromatic flavours, including a few that will be familiar to modern cooks for example basil, fennel and dill. Over the following few centuries, the wealthy families of Wesstern Europe strove to serve up the most exotic meals, and as a result the best cooks and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collecting, trying out, and publishing the recipes of their peers. When we get to the 1900s, recipe publications are greatly in demand mostly as a result of increased literacy, people having increased free time and having more money. The arrival of TV brought us TV chefs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes such as those found on our site. |
